Urad is supplied as whole black (sabut), split-with-skin (chilka) and skinned-white (urad dhuli) — the dhuli grade being the one batter and papad manufacturers reorder for a clean, light paste. Purity, broken percentage and polish are declared per lot. Sourcing is from the Madhya Pradesh, Andhra Pradesh and Tamil Nadu belts.
